Baked Oatmeal is one of our favorite meal prep recipes. Although it does take some time in the oven, preparing it is so easy, healthy and delicious! Enjoy this recipe with any fruit that you like, I sometimes add bananas to the blueberry one but you could also do any berry, apples, pears or peaches. Yumm!
2 cups old fashioned oats
1 tsp cinammon
1 pinch of salt
1 tsp baking powder
1 3/4 cup almond milk
1 tbsp vanilla extract
1/3 cup maple syrup or sugar free maple syrup (we used lakantos maple flavor syrup)
2 eggs or flax eggs (to make flax eggs: combine 2 tbsp of flaxseed meal + 2 tbsp water, let it set until it becomes a gel)
3 Tbsp melted ghee or coconut oil
1 pint of blueberries
Preheat the oven at 375 F.
Combine all the dry ingredients in one bowl. Add the blueberries and coat them well with the dry mixture.
To the same bowl add the wet ingredients: almond milk, vanilla extract, maple, eggs, oil or ghee.
Pour the batter into a 9 inch square baking pan, place in the oven for 40-45 minutes until set!
