We've all heard about the fabulous benefits meditation right?  it reduces stress levels, promotes healthier living, makes you more productive, it can make you happier, ectetera...

There are thousands of ways to meditate, some people do breath-work, some do grounding, others do fancy things such as mantra singing or trascendental meditation. All of this methods are wonderful ways to get you to meditate. But just like the human body, all minds are different... So what do I do to meditate? I make banana bread.

Yes, you heard it right. Banana Bread...... with Chocolate Chips to be exact. Cooking has always and will always be my way of meditating, relaxing, enjoying, being in the present. My kitchen is my sanctuary.

That is why I am sharing one of my all time favorite recipes with you: Banana and Chocolate Chip Bread.

It is sweet, made with whole grains, low in sugar and so delicious!

I bet you didn't think meditation could be that good for you...

1 cup banana puree

2 eggs

1/4 cup honey (I like mine not too sweet, you can add up to 1/2 cup)

1 Tbsp vanilla extract

1/4 cup coconut oil or butter, melted

1/2 cup greek yogurt

1/4 tsp baking soda

1/2 tsp baking powder

1 1/2 cup spelt or whole wheat flour

1 tsp cinnamon powder

1/2 tsp sea salt.

1 cup semi sweet chocolate chips

Preheat de oven at 180 C / 350 F.

Prepare your loaf pan with oil and flour to prevent the bread from sticking.

In a bowl mix (wet ingredients): eggs, vanilla, banana puree, honey, oil or butter and yogurt.

In another bowl mix (dry ingredients): spelt flour, cinnamon, salt, baking soda and baking powder.

Add dry ingredients into wet ingredients and stir to combine.

Pour mix into loaf pan and bake for about 30-40 minutes or until the top is golden brown and a stick comes out clean after inserting it in the middle.

I hope you enjoy this recipe as much as I do!

With love,

Alicia
