That is why I am sharing one of my all time favorite recipes with you: Banana and Chocolate Chip Bread.
It is sweet, made with whole grains, low in sugar and so delicious!
I bet you didn't think meditation could be that good for you...
1 cup banana puree
1/4 cup honey (I like mine not too sweet, you can add up to 1/2 cup)
1 Tbsp vanilla extract
1/4 cup coconut oil or butter, melted
1/2 cup greek yogurt
1/4 tsp baking soda
1/2 tsp baking powder
1 1/2 cup spelt or whole wheat flour
1 tsp cinnamon powder
1/2 tsp sea salt.
1 cup semi sweet chocolate chips
Preheat de oven at 180 C / 350 F.
Prepare your loaf pan with oil and flour to prevent the bread from sticking.
In a bowl mix (wet ingredients): eggs, vanilla, banana puree, honey, oil or butter and yogurt.
In another bowl mix (dry ingredients): spelt flour, cinnamon, salt, baking soda and baking powder.
Add dry ingredients into wet ingredients and stir to combine.
Pour mix into loaf pan and bake for about 30-40 minutes or until the top is golden brown and a stick comes out clean after inserting it in the middle.
I hope you enjoy this recipe as much as I do!
