Doughnuts are one of our guiltiest pleasures, that's why today we recreated a healthy version of them so we can still enjoy them and get plenty of nutrition at the same time. We used a combination of oat and almond flour to create a light and fluffy texture.
1/3 cup coconut sugar or any low-calorie sweetener, we used Lakanto's Monkfruit Granulated Sugar
2 eggs
5 ml vanilla extract
75 gr. oat flour
50 gr. almond flour
1 gr baking powder
1 gr. salt
1 tsp cinnamon
1/4 cup coconut oil, melted
1/8 cup almond milk
Preheat the oven to 350 F / 180 C. Prepare your doughnut mold with some sprayed oil.
Mix the dry ingredients in a bowl: almond flour, oat flour, baking powder, salt, and cinnamon.
Mix the wet ingredients in a bowl: coconut sugar, eggs, coconut oil almond milk.
Mix the dry into the wet ingredient and mix until everything is well incorporated.
Fill the doughnut mold with the batter to 3/4 of its capacity. Bake for about 10-15 minutes.
Top with some almond or peanut butter!
